Manaus is a city situated in the central part of the Brazilian Amazon Basin on the Amazon River. Together with the Upper Amazon Basin, this place is renown for its cacao fields that help to produce some of the worlds finest chocolate.

Manaus is represented as a relief map and displays the history of chocolate in the region, and its evolution of both quality and taste over time.

Upper layers represent the newer tastes and colours, and as gradation occurs these lead us towards the original bitter taste and its darkest colour. Eating layer by layer you experience the history of chocolate.
